Lobster & Salmon Pasta

Ingredients
  

  • 3 salmon fillets
  • 4 lobster tails
  • 1 tbsp olive oil
  • ½ cup fresh parsley
  • 1 bag tagliatelle pasta noodles
  • 1 cup white onion
  • 5 tbsp butter
  • ½ cup shallots
  • 2 tsp cajun seasoning
  • 2 tsp onion powder
  • 1 tsp red pepper flakes
  • 2 tsp fresh garlic
  • 2 tbs black pepper
  • 2 tsp old bay

Method
 

  1. Boil 2 qtz of water in a medium-size pot.
  2. Clean and rinse salmon, lobster tails, and fresh parsley. Then, pat dry afterwards. Cut the lobster out of the shells (tails), then throw the shells away.
  3. Finely chop up garlic, parsley, onion, and shallots.
  4. Add the pasta noodles to water once it starts to boil. Cook for 8-10 min.
  5. Season salmon and lobster with cajun seaoning, old bay, garlic powder, and onion powder.
  6. Heat a medium-sized skillet/pan over medium high heat with 1 tbsp olive oil. Sear the salmon for 4 minutes on each side. Then, sear lobster for 5-6 minutes.
  7. Once noodles are done cooking, drain them then set aside. Set aside 1 cup of pasta water to add in pasta.
  8. Heat a large pot/pan over medium-high heat with 1 tbsp butter. Then, add chopped garlic, onions, and shallots.
  9. Add the sun-dried tomatoes and sear for a few minutes. Add red pepper flakes, cajun seasoning, garlic powder, black pepper and onion powder.
  10. Mix seasonings into the tomatoes and aromatics for the pasta sauce. Add 4 tbsp of butter, then cover pot with top.
  11. Add cooked pasta noodles and pasta water into the pot and mix them with pasta sauce.
  12. Add the salmon, lobster and chopped parsley to the pasta. Mix altogether again. Then cover the pot with the lid. Let pasta simmer on low heat for 5-10 minutes.
